Entrecôte, also called rib eye, is cut from the front part of the back and is shipped with a bone-in portion. This meat is very aromatic and strongly marbled. It is streaked with a characteristic, pithy eye of fat. The special maturing process in the cold chambers extracts water from the meat and activates enzymes. The meat becomes tender and the flavour intensifies. After 28 days of maturing, the meat is at its most tender.

As with any butcher, we cannot weigh most products to the gram. When we cut the pieces individually, we orientate ourselves to 100g less than stated in the price in order to minimise additional costs in the final invoice.

The meat is shipped fresh and can be kept in a vacuum at approx. 8°C for a maximum of 10 days after receipt.
